Ingredients

  • 1 medium (about 1 lb) green papaya, peeled and seeded
  • 2 limes lime (juiced)
  • 1 large Thai chili or red chili, seeded and minced
  • ½ cup roasted unsalted peanuts, roughly chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup, loosely packed fresh cilantro and mint (mixed)
  • 1.5 tbsp fish sauce

Instructions

    Using a box grater or julienne peeler, shred the green papaya into thin matchsticks into a large bowl.

    Add the minced chili, lime juice, fish sauce, and a pinch of salt to the papaya.

    Gently toss everything together until the papaya begins to soften and release its juices, about 2 minutes.

    Stir in the cherry tomatoes and half the peanuts, reserving the rest for topping.

    Divide between two bowls and top with fresh cilantro, mint, and remaining peanuts.

    Serve immediately while the papaya is still crisp.
