Ingredients

  • 1 medium green papaya, peeled and julienned
  • 1 whole lime (juiced)
  • 1.5 tbsp fish sauce
  • 1 whole Thai bird's eye chili, sliced
  • 1 cup long beans or green beans, cut into 2-inch pieces
  • ¾ cup cherry tomatoes, halved
  • ¼ cup roasted peanuts, crushed

Instructions

    Pound chili and long beans in a mortar and pestle 3 times to crack and bruise them.

    Add papaya and tomatoes, lightly toss and pound 2 more times—papaya should stay crisp.

    Pour lime juice and fish sauce over the salad.

    Toss everything together until the flavors blend and the papaya begins to soften slightly.

    Top with crushed peanuts and serve immediately on a plate or in a bowl.
