Ingredients

  • 2 cups sushi rice (cooked and seasoned)
  • ¾ lb shrimp (large, peeled and deveined)
  • ¼ cup mayonnaise
  • 2 tbsp sriracha
  • 1 whole avocado (ripe)
  • ½ whole cucumber (English or Persian)
  • 1 tbsp sesame seeds (black or white)

Instructions

    Pat shrimp dry with paper towels. Season lightly with salt and pepper.

    Heat oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Add shrimp and cook without stirring for 90 seconds, then flip and cook until pink throughout, ~90 seconds more.

    Stir mayo and sriracha together in a small bowl until smooth and red throughout.

    Slice avocado and cucumber into thin strips. Divide rice between two bowls.

    Top rice with shrimp, avocado, cucumber, and spicy mayo. Sprinkle sesame seeds and serve immediately.
