Ingredients
- 2 cups sushi rice (cooked and seasoned)
- ¾ lb shrimp (large, peeled and deveined)
- ¼ cup mayonnaise
- 2 tbsp sriracha
- 1 whole avocado (ripe)
- ½ whole cucumber (English or Persian)
- 1 tbsp sesame seeds (black or white)

Pat shrimp dry with paper towels. Season lightly with salt and pepper.

Heat oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

Add shrimp and cook without stirring for 90 seconds, then flip and cook until pink throughout, ~90 seconds more.

Stir mayo and sriracha together in a small bowl until smooth and red throughout.

Slice avocado and cucumber into thin strips. Divide rice between two bowls.
