Ingredients
- 1.5 lb chicken breast
- 2 medium bell pepper
- 1 medium onion
- 1 large carrot
- 3 tbsp soy sauce
- 2 tbsp chili garlic sauce
- 3 tbsp vegetable oil
- 1 tbsp cornstarch

Slice the 1.5 lb chicken breast into thin strips and toss with 1 tbsp cornstarch, 1 tbsp soy sauce, and 1 tbsp vegetable oil. Let marinate while you prep veggies.

Slice the 2 bell peppers, 1 onion, and 1 carrot into thin strips. Keep them separate from the chicken.

Heat 2 tbsp vegetable oil in a large skillet or wok over high heat until shimmering. Add the chicken in a single layer and cook without stirring for 2 minutes, until browned on one side, then stir-fry for 3-4 minutes until cooked through. Remove to a plate.

Add the sliced bell peppers, onion, and carrot to the same skillet. Stir-fry over high heat for 4-5 minutes until crisp-tender and slightly charred at the edges.

In a small bowl, mix 2 tbsp soy sauce, 2 tbsp chili garlic sauce, and 2 tbsp water. Pour over the veggies and stir to coat.

Return the chicken to the skillet. Toss everything together for 1-2 minutes until the sauce thickens and coats the chicken and veggies evenly. Serve hot.
