Ingredients
- 4 medium potatoes
- 1 lb ground beef
- 1 medium onion
- 3 cloves garlic
- 1 cup tomato sauce
- 1 tsp chili powder
- ½ cup fresh cilantro
- 3 tbsp olive oil

Dice the 4 potatoes into 1-inch cubes and boil in salted water until just tender, about 10 minutes. Drain and set aside.

In a bowl, mix the 1 lb ground beef with 1/2 tsp salt and 1/2 tsp black pepper. Roll into 1-inch meatballs.

Heat 2 tbsp olive oil in a large skillet over medium-high. Add the meatballs and cook until browned on all sides, about 8 minutes. Remove and set aside.

In the same skillet, add 1 tbsp olive oil, 1 sliced onion, and 3 minced garlic cloves. Cook until soft and golden, about 5 minutes.

Add the 1 tsp chili powder and 1 cup tomato sauce. Stir and bring to a simmer, about 2 minutes.

Add the boiled potatoes and meatballs to the skillet. Stir to coat, then cover and cook until potatoes are crispy and sauce thickens, about 10 minutes.

Garnish with 1/2 cup chopped cilantro and sliced fresh chilies if desired. Serve hot.
