Ingredients
- 1 cup split yellow lentils (chana dal)
- ½ cup rice
- ½ cup peanuts
- 10 leaves curry leaves
- 1 teaspoon chili flakes
- 1 whole lime
- 1 teaspoon salt
- 2 tablespoons oil

Rinse the 1 cup lentils and 0.5 cup rice together, then soak in water for 20 minutes. Drain and spread on a clean towel to dry for 10 minutes.

Heat 2 tbsp oil in a large skillet over medium heat. Add the dried lentils and rice, and toast, stirring often, until they turn golden and smell nutty, about 8-10 minutes.

Add the 0.5 cup peanuts and 10 curry leaves. Continue toasting for 3-4 minutes until the peanuts are lightly browned and the leaves are crisp.

Remove from heat and stir in 1 tsp chili flakes and 1 tsp salt. Taste and adjust seasoning.

Let the mixture cool completely, then squeeze the juice of 1 lime over it and toss well. Serve immediately or store in an airtight container for up to a week.
