Ingredients

  • 1 lb ground lamb
  • ⅓ cup panko breadcrumbs
  • 1 whole egg
  • 1 can (28 oz) canned crushed tomatoes
  • 1 tbsp total (mixed) dried oregano, thyme, and cumin
  • ½ whole lemon

Instructions

    Mix ground lamb, breadcrumbs, egg, half the herb blend, salt, and pepper in a bowl until just combined.

    Roll mixture into 16–20 balls (about 1.5 inches each) and place on a plate.

    Heat olive oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Working in batches, sear meatballs without moving them for 3 minutes until golden, then roll and sear 2 minutes more.

    Pour in crushed tomatoes and remaining herbs, stir gently, then simmer for 8–10 minutes until sauce thickens slightly.

    Squeeze half a lemon over the sauce, taste, and adjust salt and pepper. Serve hot.
