Ingredients
- 1 lb ground lamb
- ½ medium onion, finely minced
- 1.5 tsp cumin
- 1 tsp paprika
- ¼ tsp cinnamon
- ½ cup tahini
- 1 whole lemon (juiced)
- 1 medium cucumber, sliced thin

Mix lamb, minced onion, cumin, paprika, cinnamon, 1/2 tsp salt, and 1/4 tsp pepper in a bowl until just combined.

Divide mixture into 8 portions. Mold each around a metal skewer, pressing firmly into a 4-inch log.

Brush kofta with 2 tbsp olive oil. Lay on a sheet pan. Roast at 425°F for 12–14 minutes until edges char and meat reads 160°F.

Whisk tahini with lemon juice, 1 garlic clove (minced), 3 tbsp water, salt, and pepper until smooth and pourable.

Spread tahini sauce on a platter. Lay kofta on top. Scatter cucumber slices and cherry tomatoes around.
