Ingredients
- 1 lb lamb shoulder, cut into 1.5-inch cubes
- 3 tbsp roasted peanut powder or ground unsalted peanuts
- 1 tbsp cayenne pepper
- 1 tsp paprika
- 1 tbsp ginger, minced
- 1 medium red onion, cut into 1-inch chunks
- 1 large red or yellow bell pepper, cut into 1-inch chunks

Mix peanut powder, cayenne, paprika, ginger, 1 tsp salt, and 2 tbsp oil in a shallow bowl.

Toss lamb cubes in the spice mixture until fully coated. Let sit 5 minutes.

Thread lamb onto skewers, alternating with onion and pepper chunks.

Heat grill or grill pan to high. Sear skewers 3–4 minutes per side until edges char.

Transfer to a plate. Squeeze fresh lime juice over the top if you have it.
