  • 1 lb lamb shoulder or leg, cut into 1-inch cubes
  • ½ cup roasted unsalted peanuts, finely ground
  • 1.5 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tbsp ginger, finely grated
  • 2 tbsp onion, minced
  • 3 tbsp neutral cooking oil

    Mix peanut powder, cayenne, paprika, ginger, minced onion, 1.5 tsp salt, and 0.5 tsp black pepper in a shallow bowl.

    Pat lamb dry. Thread onto metal skewers, leaving 1/4 inch between pieces for even cooking.

    Brush lamb with oil on all sides, then roll in peanut mixture, pressing gently so coating sticks.
