Ingredients

  • 1 whole (about 1.5 lb) whole fish (cleaned, scaled)
  • ½ cup plain yogurt
  • 2 tsp garam masala
  • 1 tsp paprika
  • 1 tsp salt
  • 1 whole lime
  • 1 medium onion
  • ¼ cup mayonnaise

Instructions

  1. 1

In a small bowl, mix 1/2 cup yogurt, 2 tsp garam masala, 1 tsp paprika, and 1 tsp salt. Score the fish 3 times on each side, then rub the marinade all over, inside and out. Let sit for 15 minutes.

  2. 2

Preheat grill or broiler to medium-high. Place the fish on a lightly oiled grate or baking sheet. Cook for 8-10 minutes per side, until the skin is charred and the flesh flakes easily with a fork.

  3. 3

While the fish cooks, slice 1 medium onion into thin rings and soak in cold water for 5 minutes to crisp. Cut 1 lime into wedges.

  4. 4

For the orange sauce, whisk 1/4 cup mayonnaise with 2 tbsp orange juice (from the lime? no, use orange juice—but we didn't list orange; adjust: use lime juice instead) — actually, we'll make a lime-mayo sauce: mix 1/4 cup mayo with juice of half the lime.

  5. 5

For the white sauce, mix 1/4 cup yogurt (from the marinade? we used all; so use extra? we didn't list extra; so skip white sauce or use mayo as base) — better: use the remaining yogurt? we have none; so we'll make a simple yogurt sauce by reserving 2 tbsp of the marinade before adding to fish. So step: Reserve 2 tbsp of the marinade in a small bowl for the white sauce.

  6. 6

Serve the hot fish with onion rings, lime wedges, and both sauces on the side.

  7. 7

Garnish with extra lime wedges if desired.
