Ingredients

  • 4 large eggs
  • ½ medium yellow onion
  • 1 medium tomato
  • 1 whole green chili
  • 2 rolls pav (dinner rolls)
  • 2 tbsp butter

Instructions

    Dice the onion and tomato into small pieces. Mince the green chili.

    Heat 1 tbsp butter in a large skillet over medium-high heat until foaming.

    Add onion and green chili; sauté until onion softens, about 2 minutes.

    Add tomato and cook until it breaks down, about 1 minute. Season with salt and pepper.

    Whisk eggs in a bowl, then pour into the skillet. Stir gently until soft curds form, 2–3 minutes.

    Warm pav in the same skillet or toast under the broiler, then brush with remaining 1 tbsp butter. Serve bhurji alongside warm pav.
