Ingredients

  • 1 cup chickpea flour
  • ½ cup water
  • ¼ teaspoon turmeric
  • ½ teaspoon red chili powder
  • ½ teaspoon salt
  • 2 tablespoons oil

Instructions

  1. 1

In a bowl, mix 1 cup chickpea flour, 0.25 tsp turmeric, 0.5 tsp red chili powder, and 0.5 tsp salt. Add 0.5 cup water and stir into a stiff, smooth dough; it should be pliable but not sticky.

  2. 2

Heat 2 tbsp oil in a deep pan over medium heat until a tiny piece of dough sizzles on contact, about 2 minutes.

  3. 3

Fit a sev press or piping bag with a star nozzle and fill with the dough. Press 2-3 inch sticks directly into the hot oil, working in batches to avoid crowding.

  4. 4

Fry the sticks, turning occasionally, until golden and crisp, about 3-4 minutes. They should sound crackly when stirred.

  5. 5

Remove with a slotted spoon and drain on paper towels. Sprinkle with extra chili powder or chaat masala if you like, then cool completely before storing.

  6. 6

Serve as a snack or use as a crunchy topping on yogurt or salads.
