- ½ teaspoon red chili powder
- ½ teaspoon salt

In a bowl, mix 1 cup chickpea flour, 0.25 tsp turmeric, 0.5 tsp red chili powder, and 0.5 tsp salt. Add 0.5 cup water and stir into a stiff, smooth dough; it should be pliable but not sticky.

Heat 2 tbsp oil in a deep pan over medium heat until a tiny piece of dough sizzles on contact, about 2 minutes.

Fit a sev press or piping bag with a star nozzle and fill with the dough. Press 2-3 inch sticks directly into the hot oil, working in batches to avoid crowding.

Fry the sticks, turning occasionally, until golden and crisp, about 3-4 minutes. They should sound crackly when stirred.
