Ingredients

  • 1 lb ground beef
  • 1.5 cups long-grain rice
  • 1 can (14.5 oz) canned diced tomatoes
  • 2 medium onions, divided
  • 1 tsp each, or 1 tsp garam masala cumin seeds, cinnamon stick, cloves (whole spices)
  • 2 medium tomatoes, fresh

Instructions

  1. 1

Dice one onion. Heat oil in a large skillet over medium-high heat.

  2. 2

Brown ground beef, breaking up with a spoon, until no pink remains, about 6 minutes.

  3. 3

Add diced onion and whole spices (or garam masala), stir until fragrant, about 1 minute.

  4. 4

Pour in canned tomatoes with juice and rice, stir well, then add 2.5 cups water and salt to taste.

  5. 5

Bring to a boil, cover, reduce heat to low, and simmer until rice is tender and water absorbs, about 10 minutes.

  6. 6

While rice cooks, thinly slice remaining onion and dice fresh tomatoes. Toss together on a plate.

  7. 7

Fluff rice with a fork. Serve pilau topped with fresh tomato and onion salad.
