Ingredients

  • ¾ cup jasmine rice
  • 6 cups chicken or vegetable broth
  • ½ lb ground pork
  • 1.5 tbsp minced fresh ginger
  • 3 whole scallions (white + green parts, divided)
  • 1.5 tbsp soy sauce
  • 2 pieces store-bought crispy fritter or youtiao
  • 1 tsp sesame oil

Instructions

    Bring broth to a boil in a large pot over high heat, then add rice and stir.

    Reduce heat to medium-low and simmer uncovered 12–14 minutes, stirring occasionally, until rice breaks down and broth turns creamy.

    While congee simmers, brown ground pork in a skillet over medium-high with white parts of scallions, breaking up with a spoon, until cooked through, ~5 minutes.

    Stir ginger and 1 tbsp soy sauce into the pork; cook 30 seconds until fragrant.

    Divide congee between bowls and top each with the pork mixture, fritter pieces, and green scallion slices.

    Drizzle sesame oil over the top and serve immediately.
