Ingredients
- ¾ cup jasmine rice
- 6 cups chicken or vegetable broth
- ½ lb ground pork
- 1.5 tbsp minced fresh ginger
- 3 whole scallions (white + green parts, divided)
- 1.5 tbsp soy sauce
- 2 pieces store-bought crispy fritter or youtiao
- 1 tsp sesame oil

Reduce heat to medium-low and simmer uncovered 12–14 minutes, stirring occasionally, until rice breaks down and broth turns creamy.

While congee simmers, brown ground pork in a skillet over medium-high with white parts of scallions, breaking up with a spoon, until cooked through, ~5 minutes.
