Ingredients

  • 1 loaf crusty baguette or cibatta
  • ¼ lb jamón serrano or prosciutto, sliced thin
  • ¼ lb aged manchego or pecorino cheese, sliced
  • 2 medium ripe tomatoes
  • 8 fillets anchovy fillets in oil
  • 2 tbsp olive oil
  • 2 tbsp fresh basil or parsley, chopped

Instructions

    Slice the baguette diagonally into ½-inch-thick crostini.

    Dice the tomatoes and toss with 1 tbsp olive oil, salt, and pepper.

    Arrange crostini on a board. Top half with jamón and folded cheese slices.

    Top the remaining crostini with the tomato mixture and an anchovy fillet.

    Drizzle everything with the remaining olive oil. Scatter fresh herbs on top.
