Ingredients
- 1 cup long-grain white rice
- 8 oz smoked sausage
- 1 medium onion
- 1 medium red bell pepper
- 1 medium green chili pepper
- 2 cups chicken broth
- 2 tbsp olive oil
- ½ tsp salt

Heat 2 tbsp olive oil in a large skillet over medium-high. Add 8 oz sliced smoked sausage and cook until browned, about 5 minutes. Remove with a slotted spoon.

Add 1 diced onion, 1 diced red bell pepper, and 1 minced green chili to the same skillet. Cook until softened, about 5 minutes.

Stir in 1 cup rice and 0.5 tsp salt. Toast for 2 minutes, stirring constantly, until rice smells nutty.

Pour in 2 cups chicken broth and bring to a boil. Reduce heat to low, cover, and simmer until liquid is absorbed and rice is tender, about 20 minutes.
