Ingredients
- 1 loaf baguette
- 4 oz cured ham (e.g., serrano)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 1 jalapeño
- 6 cherry tomatoes
- 2 tbsp olive oil

Slice the 1 baguette lengthwise and toast the cut sides in a dry skillet over medium heat until golden, about 2 minutes. Set aside.

Thinly slice the 1 red bell pepper, 1 yellow bell pepper, 1 onion, and 1 jalapeño (remove seeds for less heat).

Heat the 2 tbsp olive oil in a large skillet over medium-high heat. Add the sliced peppers, onion, and jalapeño. Cook, stirring occasionally, until softened and lightly charred, about 8 minutes.

Halve the 6 cherry tomatoes and add them to the skillet. Cook for 2 more minutes, until tomatoes are just warmed through.

Layer the 4 oz cured ham on the bottom half of the toasted baguette.

Pile the cooked vegetables over the ham, then close the sandwich with the top half. Slice and serve warm.
