Ingredients

  • 3 oz jamón serrano (or prosciutto), sliced thin
  • 2 oz manchego (or sharp cheddar), sliced
  • 4 slices crusty bread (baguette or ciabatta), sliced 1/2-inch thick
  • 10 oz potatoes, cut into 1/2-inch cubes
  • 1 tbsp hot honey (or drizzle of honey mixed with red pepper flakes)
  • ½ tsp smoked paprika
  • 1 tbsp fresh parsley or chives, chopped

Instructions

    Heat 2 tbsp olive oil in a large skillet over medium-high. Add potatoes and cook, stirring often, until golden and crispy, about 10 minutes.

    Toss potatoes with smoked paprika, salt, and pepper. Transfer to a plate and keep warm.

    In the same skillet, toast bread slices 90 seconds per side until golden and crispy on edges.
