Spaghetti with Peas and Parmesan

Ingredients
- 8 oz spaghetti
- 1 cup frozen peas
- ½ cup Parmesan cheese, grated
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped

Bring a large pot of salted water to a boil. Add the 8 oz spaghetti and cook until al dente, about 9-11 minutes, stirring occasionally.

While the pasta cooks, heat the 2 tbsp olive oil in a large skillet over medium heat. Add the 2 minced garlic cloves and cook until fragrant, about 1 minute, stirring constantly.

Add the 1 cup frozen peas to the skillet and cook until heated through, about 3-4 minutes, stirring occasionally. Season with salt and pepper.

Reserve 1/2 cup of pasta water, then drain the spaghetti. Add the spaghetti to the skillet with the peas, along with the 1/2 cup grated Parmesan and a splash of the reserved pasta water. Toss everything together until the cheese melts and coats the pasta, about 1-2 minutes.

Remove from heat and stir in the 2 tbsp chopped parsley. Serve immediately with extra Parmesan on top if desired.
