Ingredients
- 4 cups fermented cabbage (sour cabbage)
- 2 tbsp vegetable oil
- 3 cloves garlic cloves
- 2 whole dried red chili peppers
- 1 tbsp soy sauce
- 1 tsp sugar
- 2 stalks scallions

Rinse the 4 cups fermented cabbage under cold water and squeeze out excess liquid. If it is very salty, soak in water for 10 minutes, then squeeze dry.

Heat the 2 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the 2 dried red chili peppers and 3 sliced garlic cloves, stir-fry until fragrant, about 30 seconds.

Add the cabbage to the skillet. Stir-fry for 5-7 minutes, until it is heated through and starting to brown at the edges.

Add the 1 tbsp soy sauce and 1 tsp sugar. Stir-fry for another 2 minutes, until the cabbage is glossy and the sugar has dissolved.

Turn off the heat and stir in the 2 sliced scallions. Serve hot as a side dish or over steamed rice.

Taste and adjust seasoning: add more soy sauce if you like it saltier, or a pinch of chili flakes for extra heat.
