Ingredients

  • 2 cups cooked blue rice
  • 2 cups shredded green papaya or cabbage
  • 1 medium, shredded carrot
  • 2 tablespoons juice lime
  • 1 tablespoon fish sauce
  • 2 tablespoons chopped peanuts

Instructions

    In a large bowl, combine 2 cups shredded green papaya or cabbage, 1 shredded carrot, and 2 tbsp lime juice. Toss well.

    Add 1 tbsp fish sauce and mix thoroughly. Let sit for 5 minutes to soften.

    Serve the salad over 2 cups cooked blue rice. Top with 2 tbsp chopped peanuts and optional fresh herbs, bean sprouts, sliced red onion, and a halved hard-boiled egg.

    For extra heat, sprinkle with crushed dried chilies or sliced fresh red chilies before serving.
