Ingredients
- 2 cups cooked blue rice
- 2 cups shredded green papaya or cabbage
- 1 medium, shredded carrot
- 2 tablespoons juice lime
- 1 tablespoon fish sauce
- 2 tablespoons chopped peanuts

In a large bowl, combine 2 cups shredded green papaya or cabbage, 1 shredded carrot, and 2 tbsp lime juice. Toss well.

Add 1 tbsp fish sauce and mix thoroughly. Let sit for 5 minutes to soften.
