Ingredients

  • 1 block (about 16 oz) soft tofu
  • 1 tbsp vegetable oil
  • 1 small, sliced onion
  • 1 tbsp gochugaru (Korean chili flakes)
  • 2 cloves, minced garlic
  • 2 cups vegetable broth
  • 1 tbsp soy sauce
  • 1 large egg

Instructions

    Heat 1 tbsp vegetable oil in a medium pot over medium heat. Add 1 sliced onion and cook until soft, about 5 minutes.

    Stir in 1 tbsp gochugaru and 2 minced garlic cloves, cook for 1 minute until fragrant.

    Pour in 2 cups vegetable broth and 1 tbsp soy sauce. Bring to a boil, then reduce heat to low and simmer for 5 minutes.

    Gently slide in 1 block of soft tofu, breaking it into large chunks with a spoon. Simmer for 5 minutes until tofu is heated through.

    Crack 1 egg into the center of the stew. Cover and cook for 2-3 minutes until egg white is set but yolk is still runny.

    Serve hot, optionally garnished with sliced scallions or a drizzle of sesame oil if you have them.
