Ingredients

  • 1.5 cups kimchi
  • ½ lb pork belly or beef
  • 8 oz tofu
  • 1 medium zucchini
  • 3 stalks green onions
  • 1 tbsp gochugaru (Korean chili flakes)

Instructions

  1. 1

In a pot, combine 1.5 cups kimchi with its juice, 0.5 lb sliced pork belly or beef, and 2 cups water. Bring to a boil over high heat, then reduce to medium and simmer until the meat is cooked through, about 10 minutes.

  2. 2

Add 1 medium zucchini (sliced) and 1 tbsp gochugaru. Cook until the zucchini is tender but still firm, about 5 minutes.

  3. 3

Gently add 8 oz tofu (cubed) and 3 sliced green onions. Simmer for 2 minutes until the tofu is heated through. Taste and add salt if needed. Serve hot with rice.
