Ingredients

  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • 1 whole large egg
  • 1.5 cups all-purpose flour
  • ½ tsp cream of tartar
  • 3 tbsp ground cinnamon

Instructions

    Preheat oven to 375°F. Beat butter and 0.75 cup sugar until fluffy, ~2 minutes.

    Add egg to butter mixture and beat until combined, about 30 seconds.

    Stir in flour, cream of tartar, and a pinch of salt until just combined.

    Mix 2 tbsp cinnamon with 2 tbsp sugar in a shallow bowl for rolling.

    Scoop dough into 1-inch balls, roll in cinnamon-sugar, then place 2 inches apart on a parchment-lined sheet.

    Bake 10–12 minutes until edges set but centers still soft. Cool on pan 2 minutes, then transfer to wire rack.
