Ingredients
- 8 oz rice vermicelli noodles
- 12 oz canned snails
- 8 pieces shrimp balls
- 4 oz fish cake
- 6 cups vegetable broth
- 2 tbsp fish sauce
- 2 cups lettuce
- 1 cup fresh herbs (chives, cilantro)

Cook the 8 oz rice vermicelli noodles according to package directions until tender, about 5 minutes. Drain and set aside.

In a large pot, bring 6 cups vegetable broth to a boil over high heat. Add 2 tbsp fish sauce and stir.

Add the 12 oz snails, 8 shrimp balls, and 4 oz fish cake to the boiling broth. Reduce heat to medium and simmer until shrimp balls are cooked through and fish cake is heated, about 8 minutes.

Divide the cooked noodles among 4 bowls. Ladle the hot broth, snails, shrimp balls, and fish cake over the noodles.

Top each bowl with 2 cups lettuce and 1 cup fresh herbs. Serve immediately with extra fish sauce on the side if desired.
