Smothered Tex-Mex Beef Burritos

Ingredients

  • 1.5 lb ground beef
  • 4 count flour tortillas (8-inch)
  • 1 can (15 oz) canned refried beans
  • 2 cups red enchilada sauce
  • 2 cups shredded cheddar or Mexican blend cheese
  • ½ medium onion, diced
  • 1 tsp each cumin, chili powder, garlic powder
  • 1 pinch salt and pepper to taste

Instructions

    Heat oil in a large skillet over medium-high heat. Add diced onion and cook until softened, ~3 minutes.

    Add ground beef, breaking it up with a spoon as it cooks until no pink remains, ~6 minutes.

    Stir in cumin, chili powder, and garlic powder. Season with salt and pepper. Cook 1 minute until fragrant.

    Remove skillet from heat. Stir in refried beans until combined.

    Warm tortillas in the microwave wrapped in a damp paper towel for 45 seconds, or warm one at a time in a dry skillet.

    Spread 0.5 cup enchilada sauce on the bottom of a 9x13-inch baking dish.

    Fill each tortilla with ~0.75 cup beef mixture. Roll tightly and seam-side down in the baking dish.

    Pour remaining sauce over the burritos. Top evenly with cheese.

    Bake at 350°F until cheese melts and sauce bubbles at the edges, ~10 minutes.

    Let rest 2 minutes. Serve hot with sour cream and cilantro if desired.
