Ingredients
- 1.5 lb ground beef
- 4 count flour tortillas (8-inch)
- 1 can (15 oz) canned refried beans
- 2 cups red enchilada sauce
- 2 cups shredded cheddar or Mexican blend cheese
- ½ medium onion, diced
- 1 tsp each cumin, chili powder, garlic powder
- 1 pinch salt and pepper to taste

Heat oil in a large skillet over medium-high heat. Add diced onion and cook until softened, ~3 minutes.

Warm tortillas in the microwave wrapped in a damp paper towel for 45 seconds, or warm one at a time in a dry skillet.
