Ingredients

  • 1.5 lb ground beef
  • 8 count flour tortillas (8-inch)
  • 2.5 cups canned red enchilada sauce
  • 2 cups shredded cheddar cheese
  • ½ cup onion, diced
  • 1.5 tsp cumin
  • 1 unit salt and pepper to taste
  • 4 tbsp sour cream for serving (optional)

Instructions

    Heat a large skillet over medium-high. Add ground beef and onion, breaking up meat with a spoon until no pink remains, ~8 minutes.

    Stir in cumin, salt, and pepper. Mix until fragrant, ~30 seconds.

    Preheat oven to 350°F. Pour 0.75 cup enchilada sauce into a 9x13-inch baking dish, coating the bottom.

    Warm tortillas in the microwave for 30 seconds wrapped in a damp paper towel to make them pliable.

    Fill each tortilla with ~3 tbsp cooked beef mixture and 2 tbsp cheese. Roll tightly, tucking in sides.

    Arrange burritos seam-side down in the baking dish in a single layer.

    Pour remaining enchilada sauce over burritos. Top with remaining cheese.

    Bake uncovered until sauce bubbles at the edges and cheese melts, ~12 minutes.
