Ingredients
- 1 lb ground beef
- 2 cups red chile sauce (canned enchilada sauce or homemade)
- 8 count flour tortillas (8-inch)
- 1.5 cups shredded cheddar cheese
- ½ medium yellow onion, diced
- 1 tsp cumin

Preheat oven to 425°F. Brown ground beef in a large skillet over medium-high with diced onion, breaking up meat with a spoon, until no pink remains, ~6 minutes.

Stir in cumin, salt, and pepper. Remove from heat. Spread 1/2 cup chile sauce across the bottom of a 9x13 baking dish.

Warm tortillas in the skillet 30 seconds per side so they don't tear. Fill each with 3 tbsp beef mixture and 1 tbsp cheese, then roll tight.

Place seam-side down in the baking dish. Pour remaining chile sauce over the top, then scatter remaining cheese over all.
