Ingredients
- 1 5- to 6-lb bird whole chicken
- 3 tbsp brown sugar
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp black pepper
- 1.5 tbsp kosher salt
- 2 cups wood chips (oak, hickory, or apple)

Pat chicken dry inside and out with paper towels. Tuck wing tips under and tie legs with kitchen twine.

Mix brown sugar, paprika, garlic powder, black pepper, and salt in a small bowl.

Rub spice mixture all over chicken, inside cavity and under skin. Let sit 30 minutes at room temperature.

Prepare smoker to 225°F with wood chips. Place chicken breast-side up on middle rack.

Smoke until a meat thermometer inserted in thickest thigh reaches 165°F, 2 to 2.5 hours.

Remove chicken and rest 15 minutes before carving. Serve hot with pan juices.
