Ingredients
- 1 lb smoked turkey breast, diced
- 3 stalks celery stalks, chopped
- 3 medium carrots, sliced into 1/4-inch rounds
- 1 medium yellow onion, diced
- 8 cups chicken broth
- 1 can (14.5 oz) diced tomatoes (canned)
- 1 tsp thyme + 2 leaves thyme and bay leaf (dried)
- 2 tbsp olive oil
- 1 to taste salt and pepper

Chop celery, carrots, and onion into bite-sized pieces. Dice smoked turkey.

Heat olive oil in a large pot over medium. Add onion, celery, and carrots.

Sauté vegetables for 5 minutes, stirring occasionally, until onion softens.

Add chicken broth, canned tomatoes, diced turkey, thyme, and bay leaf.

Bring to a boil, then reduce heat and simmer 20 minutes until vegetables tender.
