Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup wild rice blend (quick-cook)
  • 6 cups chicken broth
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 sprigs fresh thyme (or 1 tsp dried)

Instructions

    Heat 1 tbsp olive oil in a large pot over medium-high. Add carrots and celery; cook 3 minutes until softened.

    Pour in chicken broth and wild rice. Stir, bring to a boil, then reduce heat to medium-low.

    Simmer for 10 minutes, stirring occasionally, until rice is tender and broth is absorbed.
