Ingredients

  • 1 lb smoked pork sausage
  • 2 cups sauerkraut
  • 1.5 lb potatoes
  • 1 medium onion
  • 3 cloves garlic
  • 2 tbsp butter
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. 1

Slice sausage into 1/2-inch rounds. Peel and dice potatoes into 1-inch cubes. Thinly slice onion and mince garlic.

  2. 2

Melt butter in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.

  3. 3

Add garlic and cook for 1 minute until fragrant. Stir in potatoes and season with salt and pepper.

  4. 4

Cover and cook over medium-low, stirring occasionally, until potatoes are nearly tender, about 15 minutes.

  5. 5

Add sausage and sauerkraut. Stir to combine, cover, and cook until sausage is heated through and potatoes are fully tender, about 10 minutes.

  6. 6

Serve hot, with extra sauerkraut on the side if desired.
