Smashed Burger

Ingredients
- ½ lb ground beef (80/20)
- 2 piece burger buns
- 2 piece american cheese slices
- ¼ cup dill pickle chips
- 2 tbsp mayonnaise
- 1 tbsp yellow mustard
- 1 pinch salt and pepper to taste

Mix mayo and mustard in a small bowl. Set aside for serving.

Divide ground beef into 4 roughly equal portions. Do not overwork the meat.

Heat a skillet over medium-high until water flicks sizzle and evaporate immediately, ~2 minutes.

Place one beef portion on the hot skillet. Immediately press flat with a spatula into a thin, wide patty, ~1/8 inch thick.

Season the top with salt and pepper. Do not move the patty. Cook until the bottom is deeply browned and crispy, 2–3 minutes.

Flip and immediately top with one cheese slice. Cook until cheese melts and the second side crisps, 1–2 minutes.

Transfer the smashed burger to a plate. Repeat with the remaining 3 beef portions.

Spread mayo-mustard sauce on both halves of each bun.

Stack two cheesy patties on the bottom bun. Top with pickle chips.
