Ingredients

  • ½ lb ground beef (80/20)
  • 2 oz cheddar cheese, cut into 2 cubes
  • 2 whole burger buns
  • 1 cup lettuce, tomato, and onion for serving
  • 2 tbsp mayonnaise or burger sauce
  • 1 tbsp neutral cooking oil

Instructions

    Divide beef into 4 equal balls. Flatten 2 balls into thin patties, place a cheese cube in the center of each, then top with the other 2 patties and seal the edges firmly.

    Season both sides generously with salt and black pepper.

    Heat oil in a skillet over medium-high until it shimmers. Slide patties in and sear 4–5 minutes without moving—you'll hear steady sizzle.

    Flip once and sear another 3–4 minutes until internal temp hits 160°F. Cheese will start leaking at the edges—that's the dream.

    Toast buns lightly in the skillet, about 30 seconds per side until golden.
