Ingredients
- 3 lb beef chuck roast
- 2 tbsp olive oil
- 4 cloves garlic
- 2 tbsp fresh rosemary
- 1 tbsp fresh thyme
- 1 tbsp salt
- 1 tsp black pepper

Preheat oven to 300°F. Pat the 3 lb beef chuck roast dry with paper towels.

In a small bowl, mix 2 tbsp olive oil, 4 minced garlic cloves, 2 tbsp chopped rosemary, 1 tbsp chopped thyme, 1 tbsp salt, and 1 tsp black pepper to form a paste.

Rub the herb paste all over the beef, pressing it into the surface.

Place the beef in a roasting pan or Dutch oven. Roast uncovered for 2.5 to 3 hours, until the internal temperature reaches 145°F for medium-rare or 160°F for medium.

Remove from oven and let rest for 15 minutes before slicing. The meat should be fork-tender and browned on the outside.
