Ingredients

  • 8 oz pickled herring fillets, drained
  • 1 cup sour cream
  • 1 medium yellow onion
  • 2 tbsp fresh dill, chopped
  • ½ large apple, cored
  • 1 pinch salt and pepper to taste

Instructions

    Place the drained herring fillets on a cutting board. Cut each fillet crosswise into 1-inch-wide pieces, cutting perpendicular to the length of the fish.

    Place the yellow onion root-side down on a cutting board, then slice lengthwise from root to tip into 1/8-inch-thick half-moons, about the thickness of a coin.

    Cut the apple half lengthwise in half again, then slice each quarter crosswise into 1/4-inch-thick slices, discarding any remaining seeds.

    Pour the sour cream into a medium bowl. Add the herring pieces, sliced onion, apple slices, and chopped dill to the bowl.

    Stir gently with a rubber spatula, lifting from the bottom and folding everything together until the herring, onion, and apple are evenly coated with sour cream, about 30 seconds.

    Taste one piece of herring with a small spoon. If it needs more salt or pepper, sprinkle a pinch and stir again.

    Divide the herring mixture into four small bowls or plates, spooning equal amounts of sauce over each serving. Serve immediately or cover and refrigerate for up to 2 hours.
