Ingredients

  • 2 whole bone-in pork chops
  • 1 whole apple
  • 4 cups kale
  • 8 whole sage leaves
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

    Pat the 2 pork chops dry and season both sides with the 1 tsp salt and 1/2 tsp black pepper.

    Heat 1 tbsp olive oil in a large skillet over medium-high. Add the chops and sear until golden brown, about 4 minutes per side. Transfer to a plate.

    Reduce heat to medium. Add the remaining 1 tbsp olive oil and 1 tbsp butter. Add the 1 sliced apple and 8 sage leaves; cook until apple is softened and golden, about 3 minutes.

    Add the 4 cups kale and toss with the apple mixture. Cook until kale is wilted and tender, about 3 minutes.

    Return the pork chops to the skillet, nestling them into the kale and apples. Cook until the chops are cooked through (internal temp 145°F), about 2 minutes.

    Serve the chops with the apple-kale mixture spooned over the top.
