Ingredients
- ¾ lb pork belly, finely chopped
- ¼ lb pork liver, finely chopped
- ½ medium yellow onion, minced
- 1 whole lime
- 3 tbsp white vinegar
- ½ tsp chili flakes (or fresh hot pepper, minced)

Heat a 10-inch cast-iron skillet over medium-high until smoking hot, about 2 minutes.

Add chopped pork belly and liver. Cook, stirring and breaking up clumps, until golden and crispy, 6–7 minutes.

Add minced onion. Stir until softened and fragrant, about 2 minutes.

Pour in vinegar and squeeze lime juice over top. Sprinkle chili flakes and stir to coat.
