Ingredients

  • ½ lb ground pork
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • ½ tsp salt
  • 2 cloves garlic, minced
  • ¼ tsp black pepper

    Mince the garlic until the pieces are smaller than a grain of rice, about the size of pencil-tip dots.

    In a small bowl, combine the ground pork, brown sugar, soy sauce, salt, minced garlic, and black pepper.

    Mix the pork mixture with your hands or a spoon until the sugar and soy sauce are evenly distributed throughout, about 30 seconds.

    Place a 10-inch skillet over medium-high heat and add 1 tablespoon of olive oil, swirling to coat the bottom.

    Once the oil shimmers and slides quickly when you tilt the pan, add the pork mixture in small rough chunks, breaking it apart slightly as it hits the pan.

    Cook without stirring for 2 minutes until the bottom is golden and stuck to the pan, then stir and break the chunks into smaller pieces.

    Continue cooking and stirring every 30 seconds until the pork is no longer pink and the surface looks caramelized and dark brown, about 5 minutes total.

    Remove the skillet from heat and let it rest for 1 minute so the sausage firms up slightly.

    Divide the longganisa onto two plates and serve immediately with steamed white rice and fried eggs on the side.
