Ingredients

  • ½ lb ground pork
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 3 cloves garlic, minced
  • 2 cups cooked rice (day-old or instant)
  • 2 whole eggs
  • 2 tbsp Filipino vinegar or white vinegar

    Mix ground pork with soy sauce, brown sugar, and half the garlic until just combined—don't overwork it.

    Form into 4 small patties. Sear in a large skillet over medium-high heat, flipping once, until caramelized and cooked through, ~8 minutes total.

    Push longganisa to the side. Add remaining garlic to the pan and cook 30 seconds until fragrant.

    Add rice and break up clumps, stirring, until heated through and edges turn golden, ~3 minutes.

    Crack eggs into a clear space in the skillet and cook until whites set but yolks still jiggle, ~2 minutes.
