Ingredients

  • ½ lb beef sirloin or flank steak, thinly sliced
  • 3 tbsp soy sauce
  • 1 tbsp brown sugar
  • 6 cloves garlic, minced
  • 2 cups cooked white rice
  • 2 whole eggs
  • 3 tbsp neutral cooking oil

Instructions

    Toss beef with soy sauce, brown sugar, and 3 cloves minced garlic in a bowl.

    Heat 1 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Add beef to the skillet in a single layer and sear 2 minutes per side without stirring until edges caramelize.

    Transfer beef to a plate. Add 2 tbsp oil and remaining 3 cloves garlic to the same skillet, stir 30 seconds until fragrant.

    Add rice, breaking up clumps, and stir-fry 3 minutes until each grain is separate and lightly golden.

    Push rice to the side, crack eggs into the empty space, and fry 3 minutes until whites set but yolks still jiggle.

    Divide rice and egg between plates, top each with half the beef, and serve immediately.
