Ingredients
- 1.5 lb pork shoulder, cut into 1-inch chunks
- 3 tbsp tamarind concentrate (or paste)
- 1 medium daikon radish, cut into 1-inch pieces
- 1 medium onion, quartered
- 4 cups bok choy or spinach, roughly chopped
- 1.5 tbsp fish sauce (patis)
- 1 piece ginger, 3-inch piece, bruised
- 6 cups water

Bring water to a boil in a large pot. Add pork chunks and return to boil.

Skim off any foam, then add tamarind concentrate, ginger, and onion. Simmer uncovered 8 minutes.

Add radish pieces and simmer 4 minutes until just tender but still hold their shape.

Stir in fish sauce, then add bok choy and stir until wilted, about 60 seconds.

Taste and adjust salt or sourness to your preference. Serve hot in bowls.
