Ingredients

  • 6 count bacon strips
  • 4 count eggs
  • ½ cup sharp cheddar cheese, shredded
  • 2 count flour tortillas, 10-inch
  • ½ cup salsa
  • 1 tablespoon butter
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. 1

Cook bacon in a skillet over medium heat until crispy, about 6 minutes. Transfer to a plate.

  2. 2

Crack eggs into a bowl, add salt and pepper, and whisk until combined.

  3. 3

Melt butter in the same skillet over medium heat. Pour in eggs and let sit 15 seconds.

  4. 4

Stir gently with a spatula, pushing curds to the center, until soft curds form, about 2 minutes.

  5. 5

Chop the cooked bacon into bite-size pieces. Fold into eggs along with cheese until melted.

  6. 6

Warm tortillas in the skillet 10 seconds per side until pliable.

  7. 7

Divide egg mixture between the two tortillas, placing it in the center of each.

  8. 8

Drizzle 2 tablespoons salsa over each burrito. Fold the bottom third up, then roll tightly.

  9. 9

Serve immediately or wrap in foil to go.
