Ingredients
- ¾ cup short-grain white rice
- 6 cups water
- 1 tbsp, minced fresh ginger
- 2 whole calamansi limes or regular limes
- ¼ cup sliced shallots
- 1 whole (or to taste) sliced red chilies

Rinse rice under cold water until the water runs mostly clear, then drain.
