Silky Rice Congee with Crispy Toppings

Ingredients

  • ¾ cup short-grain white rice
  • 6 cups water
  • 1 tbsp, minced fresh ginger
  • 2 whole calamansi limes or regular limes
  • ¼ cup sliced shallots
  • 1 whole (or to taste) sliced red chilies

Instructions

    Rinse rice under cold water until the water runs mostly clear, then drain.

    Pour water into a pot and bring to a boil over high heat.

    Add rinsed rice and ginger, stir once, then reduce heat to medium-low.

    Simmer uncovered for 12-15 minutes, stirring occasionally, until rice breaks down and porridge is creamy.

    Divide congee between bowls and top with shallots and chilies.

    Squeeze calamansi or lime juice over each bowl and serve immediately.
