Ingredients

  • 1 cup canned crushed tomatoes

    Pour 2 tablespoons of olive oil onto a 9-by-13-inch sheet pan and tilt the pan so the oil coats the entire bottom surface.

    In a large bowl, mix 2 cups flour and 1 teaspoon salt, then add 0.75 cup cold water and stir with a wooden spoon until a shaggy, sticky dough forms, about 1 minute.

    Turn the dough out onto the oiled sheet pan and press it gently with your fingertips into a 9-by-13-inch rectangle covering the entire pan.

    Cut the onion in half from root to tip, place cut-side down on the cutting board, then slice each half crosswise into thin rings about 1/8-inch thick.

    Heat 2 tablespoons of olive oil in a 10-inch skillet over medium heat until it shimmers and moves quickly when you tilt the pan, about 60 seconds.

    Spread 1 cup crushed tomatoes evenly across the dough on the sheet pan using the back of a spoon.
