Ingredients

  • 6 whole chicken drumsticks
  • 2 cups broccoli florets
  • 10 whole dried red chilies
  • 1 tablespoon Sichuan peppercorns
  • 4 cloves garlic cloves
  • 3 tablespoons soy sauce
  • 3 tablespoons vegetable oil
  • 2 tablespoons cornstarch

Instructions

  1. 1

In a large bowl, toss the 6 chicken drumsticks with 2 tbsp soy sauce and 2 tbsp cornstarch until evenly coated. Let marinate for 10 minutes.

  2. 2

Heat 2 tbsp vegetable oil in a wok or large skillet over high heat. Add the chicken and sear until golden brown on all sides, about 8 minutes. Remove and set aside.

  3. 3

Reduce heat to medium and add the remaining 1 tbsp oil. Add 10 dried red chilies, 1 tbsp Sichuan peppercorns, and 4 sliced garlic cloves. Stir-fry until fragrant, about 1 minute.

  4. 4

Return the chicken to the pan. Add the remaining 1 tbsp soy sauce and stir to coat. Cook for 5 minutes, until the chicken is cooked through and the sauce thickens.

  5. 5

Add 2 cups broccoli florets and stir-fry for 3-4 minutes, until bright green and tender-crisp. Serve hot.
