Ingredients
- 8 oz glass noodles
- 1 lb shrimp, peeled and deveined
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 3 tbsp soy sauce
- 2 tbsp vegetable oil
- ½ tsp salt

Soak the 8 oz glass noodles in warm water until pliable, about 10 minutes, then drain and set aside.

Heat 1 tbsp vegetable oil in a large skillet over medium-high. Add the 1 lb shrimp and 1/4 tsp salt; cook until pink and opaque, about 3 minutes per side. Remove shrimp to a plate.

Add remaining 1 tbsp oil to the skillet. Add the 1 sliced onion and 1 sliced red bell pepper and 1 sliced green bell pepper; stir-fry until crisp-tender, about 5 minutes.

Add the drained noodles and 3 tbsp soy sauce to the skillet; toss to combine, cooking until noodles are heated through, about 2 minutes.

Return the shrimp to the skillet, toss everything together, and season with remaining 1/4 tsp salt if needed. Serve hot.
