Ingredients
- 1 lb shrimp, peeled and deveined
- 1 large red bell pepper
- 4 stalks green onions
- 4 cloves garlic
- 3 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper

Pat the 1 lb shrimp dry with paper towels and season with 1/4 tsp salt and 1/8 tsp black pepper. Set aside.

Slice the 1 red bell pepper into thin strips and chop the 4 green onions, separating white and green parts. Mince the 4 garlic cloves.

Heat 2 tbsp olive oil in a large skillet over medium-high. Add the bell pepper and white parts of green onions; cook until softened, about 4 minutes.

Add the minced garlic and 1 tsp dried oregano; stir for 30 seconds until fragrant.

Push vegetables to one side, add remaining 1 tbsp olive oil and the shrimp in a single layer. Cook without stirring for 2 minutes, until bottoms turn pink.

Flip shrimp and cook until opaque and curled, about 2 more minutes. Season with remaining salt and pepper.

Stir in the green parts of green onions and remove from heat. Serve hot with crusty bread or rice.
