Shrimp Pasta with Pesto

Ingredients
- 12 oz spaghetti
- 1 lb shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- ½ cup pesto
- 2 cloves garlic, minced
- 2 tbsp olive oil
- ¼ cup Parmesan cheese, grated
- ¼ cup fresh basil leaves

Bring a large pot of salted water to a boil. Add the 12 oz spaghetti and cook until al dente, about 9-11 minutes. Reserve 1 cup of pasta water, then drain.

While pasta cooks, heat the 2 tbsp olive oil in a large skillet over medium-high heat. Add the 2 minced garlic cloves and cook until fragrant, about 30 seconds.

Add the 1 lb shrimp to the skillet in a single layer. Cook until pink and opaque, about 2-3 minutes per side. Remove shrimp to a plate.

In the same skillet, add the 1 cup halved cherry tomatoes. Cook over medium heat until they start to soften, about 2-3 minutes.

Return the shrimp to the skillet. Add the cooked spaghetti, 1/2 cup pesto, and 1/4 cup reserved pasta water. Toss everything together over low heat until well coated, about 1-2 minutes.

Remove from heat. Stir in the 1/4 cup grated Parmesan and 1/4 cup fresh basil leaves. Add more pasta water if needed to loosen the sauce. Serve immediately.
